Belize: The Final Week
My last week in Belize was full of phenomenal experiences, delicious food, and finally, good-byes. I spent my final weekend in San Pedro seeking out more cafes and restaurants to find the best food I could. It was a success.
I found several cafes for breakfast. My first stop was The Nook. I ordered churro french toast and was not disappointed. It was by far the best french toast I have ever had. The crunchy cinnamon sugar coating on the outside was perfection and the watermelon juice was so refreshing I came back for 2 more later in the day. I then found a beautiful smoothie cafe with a view called the Beachdog. The smoothie was refreshing, sweet, and full of fresh pineapple and coconut milk.
Next I found myself at the Belize Independence Day Parade. It was a pretty cool celebration. I am very excited I got to celebrate Belize's 37th birthday with them. It was interesting to realize there are countries in this world that are so young!

My second cafe was Itza Belizean. I ordered the stuffed fry jack and was in awe as it was brought to me. It didn't fit on the plate... This fryjack was a crispy fried dough, similar to a beignet, stuffed with eggs, cheese, chicken, and peppers. It was stunningly delicious and big enough to have half leftover for lunch.
I experienced a lot of places and ate a ton of food during my two weekends in San Pedro but still feel like I missed so much...
My last week at Liberty went by too fast. I cannot wait to return and see everyone there again soon. It was a life changing experience that I am very excited to repeat.
I am already looking into both my return to Belize and my next new adventure!
